The grapes are harvested by hand, picked when ripe and sorted on the plot. Vinification takes place in the troglodyte cellar at Thoré la Rochette. It is designed to be as natural as possible, with a non-interventionist approach (indigenous yeasts, no chaptalization or deacidification). Bottling is carried out by gravity, without filtration or inputs. The wines thus reflect the vintage and terroir in which they were born.
